3717-1-04.8(A) Equipment, utensils, and linens: protection of clean items

Equipment and utensils - air-drying. After cleaning and sanitizing, equipment and utensils:

(1)

Are to be air-dried or used after adequate draining before contact with food; and

(2)

Are not to be cloth dried. Utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
